American Chef Enchanted by Chongqing Noodles

Chongqing - This November, acclaimed American chef and internet sensation Joshua Weissman arrived in Chongqing for a fiery culinary adventure, diving deep into the city's bold flavors and vibrant food culture. The trip, filmed for his upcoming video, features Chinese snacks and fast food, sparking an online discussion and prompting him to explore a local specialty, Chongqing noodles.

With popular Chongqing influencer Ryan Chen joining as his food guide, Weissman rolled up his sleeves in Taoranju's kitchen. Together, they prepared one of the city's most iconic dishes - Chongqing noodles (xiao mian), a deceptively simple yet intensely spicy bowl of noodles beloved for its bold flavor and spirit.

As he mixed chili oil, aromatics, and noodles in a single bowl, Weissman was visibly impressed. "Chongqing has such a vibrant food culture," he remarked during filming. "Today I realized how delicious a simple noodle dish can be when you use the right ingredients in the right combination. I’m definitely going to make this at home - or at least learn how."

Local creator Ryan Chen echoed the cultural significance of the dish: "Xiaomian literally means 'small noodles,' but its spirit is simplicity. The art lies in the recipe and how you balance each ingredient. It's about making simple things great."

Chongqing chef Chen Xiaobin from Taoranju Restaurant offered another layer of meaning: "The city is humid, but one bowl of spicy noodles in the morning warms your whole body. Chongqing noodles are just like Chongqing people, passionate, straightforward, warm-hearted."

As Weissman wrapped up filming, Ryan Chen delivered the city's signature hospitality: "You are always welcome to come back to Chongqing."
