Chongqing — At lunchtime in Chongqing, flames leap from the woks at Country Style Cooking (CSC), a Chinese fast-food chain built around freshly cooked meals. Founder Li Hong, in a red chef’s jacket, moves between the kitchen and dining room, tasting dishes and talking with staff. For her, cooking to order is the business, not just a selling point.
Li, a Chongqing native, started the company in 1996, years before "Chinese fast food" entered the mainstream vocabulary. As KFC and McDonald's expanded across China, she went against the prevailing model, betting that Chinese diners would prefer quick meals built around rice and freshly cooked stir-fries rather than standardized, pre-assembled food.
That wager has since scaled nationwide. CSC and its sister brand, Mr. Rice, which specializes in Hunan cuisine, now operate more than 2,000 direct-run outlets, making them China's largest fully self-operated Chinese fast-food group. All meals are cooked on site, a stance that runs counter to an industry increasingly reliant on central kitchens, pre-made dishes and automation.
Li acknowledges the costs of that decision. Seasonal produce, skilled cooks and higher-grade cooking oils all weigh on margins. But she argues that daily meals are built on trust. Sacrificing freshness or flavor, she said, would quickly undermine customer loyalty in a market where diners know what good food should taste like.
In Li's view, Chongqing's food culture has been central to shaping the brand. The city is known for its exacting palate, and Li describes it as an unforgiving but generous testing ground. She said that local customers pushed the company to refine its flavors while remaining open to new ideas, helping define what Chinese fast food could be.
Now in her late 50s, Li remains closely involved, regularly visiting stores, posting short videos online and responding directly to customer feedback. She sums up her approach as "clumsy but honest" — a stubborn commitment to fresh stir-frying in an industry obsessed with speed and scale, and the reason the business has lasted.
