Foodies: Find Delicacy in the Belt and Road International Skills Competition

Chongqing Xiaomian (Noodles), Fuling Pickles, Hechuan Taopian, and Fengdu Spicy Chicken will be on display during the Belt and Road International Skills Competition, May 26th to 31st. It is not only a skills contest but also a delicacy feast. The food exhibition will be held in S2 Hall in Chongqing Yuelai International Convention and Exhibition Expo during the competition.

 

Chongqing Xiaomian

Chongqing is known as the "hometown of Xiaomian". The various skills required to make Xiaomian will be displayed. Chongqing Xiaomian generally refers to spicy noodles with vegetables and is divided into two types: with broth and without. Each Chongqing Xiaomian restaurant has a unique flavor. As a customer, you can have your own requests such as dry noodles, hard noodles, more vegetable, and more spices.

To make a bowl of authentic Chongqing noodles, there are multiple technical activities including kneading noodles, making pepper oil, making sauces and seasonings, and more. Seasoning are the soul of Chongqing Xiaomian, a bowl of noodles is based on its spices. First, the cook will combine dozens of seasonings in a large bowl and then add the cooked noodles. The numbness and the spicy taste compliment each other, the noodles are smooth and the broth is fragrant- this is the "standard" for Chongqing people's breakfast. Some people say that the Chongqing people start with a bowl of noodles every morning and the noodle of choice is Xiaomian.

 

Fuling Pickles

Chongqing is also home to the world-famous gourmet treasure - Fuling pickles. It is known as one of the world's three famous pickles along with the French sour cucumber and the German sweet and sour cabbage. It is also one of the three famous dishes (cured vegetables, weed, bamboo shoots) exported by China.

Fuling pickles are a unique green vegetable from Fuling. It is made into fresh and crispy mustard with a unique processing technique. Whether it is eaten with pasta or rice, it can add a delicious taste to the table. The raw material of Fuling mustard is around, oblate or hammer-shaped, and the epidermis is green, which contains a variety of proteins, sugars, vitamins and trace elements such as calcium, phosphorus, and iron.

 

Hechuan Taopian

Hechuan Taopian (peach slices) is a traditional snack from Hechuan district in Chongqing dating back to 1840. Hechuan peach slices are refined and processed with raw materials such as glutinous rice, walnut kernel, Sichuan white sugar, and honey rose. The powder is fine and soft, and the peach and rose are rich in flavor.

Hechuan peach slices are thin, white, scattered rolls, soft and moist, delicate and sweet, and fresh in taste. It is a very popular souvenir gift in Chongqing. The glutinous rice, white granulated sugar and walnut kernel used in Hechuan Peach Slices are strictly selected from the finest high-quality raw materials. After nearly 20 refined processes, such as selecting materials, cooking materials and fried rice, it can be baked. 

 

Fengdu Spicy Chicken

Fengdu spicy chicken is also known as the “ghost town” spicy chicken. It was originally a famous traditional snack in Fengdu county. It is similar to “white-cut” chicken. After processing and the transformation, it has become one of Chongqing's well-known dishes. Spicy chicken nuggets are part of the Sichuan cuisine lineage, but they stand on their own and have strong regional characteristics nowadays.

Fengdu spicy chicken includes real red oil and sesame oil. The color is red and bright, the fragrance is rich and full, and the taste is spicy and sweet. The first bite of this "Chinese Snack" will be strong and crisp.

From May 26th to 31st, the Belt and Road International Skills Competition will be held in Chongqing Yuelai International Convention and Exhibition Center. There visitors can experience a wide variety of Chongqing cuisine all at one place.
